Ingredients
  

For the Zesty Dijon Mustard Dressing

  • 2.5 teaspoon Dijon mustard good quality
  • 1 lime zest
  • 1.5 limes juice
  • 0.33 cup extra virgin olive oil
  • 0.5 teaspoon sumac
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 0.5 teaspoon crushed red pepper flakes optional

For the Tuna Salad

  • 3 cans tuna 5 ounces each, quality tuna of your choice
  • 2.5 stalks celery chopped
  • 0.5 English cucumber cucumber chopped
  • 4-5 pieces radishes stems removed, chopped
  • 3 green onions green onions both white and green parts, chopped
  • 0.5 medium red onion finely chopped
  • 0.5 cup Kalamata olives pitted, halved
  • 1 bunch parsley chopped, stems removed (about 1 cup chopped fresh parsley)
  • 10-15 leaves fresh mint chopped, stems removed (about ½ cup chopped fresh mint)

Instructions
 

Dressing Preparation

  • In a small bowl, whisk together the Dijon mustard, lime zest, and lime juice. Add the olive oil, sumac, salt and pepper, and whisk again until well-blended. Set aside briefly.

Tuna Salad

  • In a large salad bowl, combine the tuna with the chopped vegetables, Kalamata olives, chopped fresh parsley and mint leaves. Mix gently with a wooden spoon.
  • Pour the dressing over the tuna salad. Mix again to ensure the tuna salad is evenly coated. Cover and refrigerate for half an hour before serving. When ready, toss the salad gently to refresh.

Notes

Use wild-caught Albacore or Yellowfin tuna, packed in water for lower fat. Dressing can be made in advance. Serve in pita sandwiches, lettuce wraps, or on roasted tomatoes. Refrigerate leftovers for up to 3 days.
