Chia Pudding Base
- 1 cup milk of choice
- 1 teaspoon black tea leaves
- 2 tablespoon dark brown sugar
- ½ teaspoon vanilla
- Pinch salt
- ¼ cup chia seeds
Salted Foam
- ¼ cup whipping cream
- Pinch salt
- 1 teaspoon brown sugar
Preparation
Heat milk in a small saucepan and when it’s hot turn off the heat and stir in the tea leaves. Let steep for 5 minutes then strain.
Stir the brown sugar, vanilla and salt into the hot milk.
Cool in the fridge for 15 minutes.
Stir in the chia seeds.
Pour into 2 glasses. Refrigerate until set (About 3 hours).
To make the salted foam whisk the cream with the salt and brown sugar. Whip to soft peaks.
Pour on top of the pudding.
