Ingredients
  

Dough

  • 1 cup whole milk warmed to about 100°F (38°C)
  • 6 Tablespoons granulated sugar divided
  • 1 Tablespoon active dry or instant yeast
  • 5 Tablespoons unsalted butter melted and slightly cooled
  • 2 large eggs at room temperature
  • 1 teaspoon salt
  • 4 cups bread flour plus more as needed for hands/work surface

Chocolate Filling

  • 6 Tablespoons unsalted butter softened to room temperature
  • ½ cup packed light or dark brown sugar
  • 2 Tablespoons cocoa powder unsweetened natural or dutch process
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ¾ cup semi-sweet chocolate chips or a 4 ounce semi-sweet chocolate bar, finely chopped

Espresso Icing

  • 3 Tablespoons heavy cream
  • 1 teaspoon espresso powder
  • 1 and ½ cups confectioners’ sugar sifted
  • ½ teaspoon pure vanilla extract

Instructions
 

Making the Dough

  • Whisk the warm milk, 2 Tablespoons sugar, and the yeast together in the bowl of your stand mixer. Cover and let sit for about 5 minutes until foamy.
  • Add remaining sugar, butter, eggs, salt, and 1 cup of flour and beat on medium speed for 1 minute.
  • Add 3 cups of flour, switch to low speed, and beat until a soft dough forms.
  • Knead the dough for 6-8 minutes until soft and slightly tacky.
  • Grease a bowl, place the dough inside, cover, and let rise in a warm area for 2 hours.

Rolling and Filling

  • Grease a baking dish. Punch down the dough and roll it out into a 10x16-inch rectangle.
  • Mix all filling ingredients except for the chocolate. Spread filling on the dough and sprinkle chocolate on top.
  • Roll up the dough tightly, cut into 12 rolls, and place in the prepared baking pan.

Rising and Baking

  • Cover rolls and let rise until doubled in size, about 1 hour.
  • Preheat oven to 350°F (177°C) and bake rolls for about 25-28 minutes.
  • Let cool slightly before making the icing.

Making the Icing

  • Warm the cream and whisk in espresso powder, then add confectioners’ sugar and vanilla extract.
  • Drizzle the icing over warm rolls and serve immediately.

Notes

You can prepare the rolls overnight by refrigerating them after shaping and letting them rise in the morning.
