- 2 Tbsp. vegetable oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, thinly sliced
- 1 lb. ground beef
- 1 pkg. taco seasoning (1 oz.)
- 1 can black beans, drained (15 oz.)
- 1 can pinto beans, drained (15 oz.)
- 1 can diced fire-roasted tomatoes (14.5 oz.)
- 1 can diced green chiles (4 oz.)
- ¼ cup sour cream
- ¾ cup shredded Cheddar cheese divided
- 1 tsp. hot sauce
- 1 cup frozen corn kernels
- 1 bag Tater Tots (32 oz.)
Cooking Instructions
Preheat oven to 350°F. Heat vegetable oil in a large skillet over medium-high. Add onion and cook until softened and translucent, about 6 minutes. Add garlic and cook for another minute.
Add beef and break apart with a spoon; cook until brown. Add taco seasoning and stir to incorporate.
Add black beans, pinto beans, tomatoes, green chiles, sour cream, ½ cup Cheddar cheese, and hot sauce, stir into meat mixture and allow to cook until the liquid thickens, about 5 minutes. Stir in frozen corn.
Transfer mixture to a greased 9- x- 13-inch baking dish.
