Ingredients
  

Meats

  • 6 slices bacon not thick-cut
  • 1 package kielbasa cut into ½-inch slices
  • 1 lb. ground beef 80/20

Vegetables

  • 1 yellow onion chopped
  • 3 garlic cloves finely chopped
  • 2 russet potatoes peeled and cut into 1-inch cubes

Canned Goods and Broth

  • 2 cups low-sodium chicken broth
  • 2 cans ranch-style beans or chili beans with their liquid
  • 1 can sweet corn drained
  • 1 can diced tomatoes with green chilis with their liquid

Spices and Seasonings

  • 3 Tbsp. all-purpose flour
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. kosher salt
  • ½ tsp. black pepper

Instructions
 

Cooking Steps

  • In a large pot, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  • Add the kielbasa and ground beef to the pot, cooking until browned. Drain excess fat if necessary.
  • Stir in the chopped onion and garlic, cooking until the onion is translucent.
  • Sprinkle the flour over the mixture and stir well to combine. Cook for a minute.
  • Add the chili powder, cumin, salt, and pepper. Stir until evenly coated.
  • Pour in the chicken broth, beans, corn, tomatoes, and potatoes. Stir to combine.
  • Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the potatoes are tender.
  • Serve hot, garnished with chopped fresh parsley, and enjoy!
