Chicken and Seasoning

  • 2 breasts boneless, skinless chicken about 1.3 lbs. total
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly cracked black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoon olive oil
  • 2 tablespoon butter divided

Sauce Ingredients

  • 1 whole garlic bulb about 8-9 garlic cloves, peeled and smashed
  • 1 cup chicken broth see how to make chicken broth
  • 0.75 cup heavy cream
  • 0.5 teaspoon garlic powder
  • Salt and Pepper to taste

Cooking Steps

  • Fillet each chicken breast into two thinner cutlets or use thin-cut chicken breasts.
  • Season the chicken with Italian seasoning, salt, and black pepper. Sprinkle the flour over both sides and rub it in.
  • Heat a skillet over medium heat, add olive oil and 1 tablespoon of butter. Cook chicken until golden brown, around 4 minutes per side. Remove and keep warm.
  • Peel and smash garlic cloves with a knife.
  • In the same skillet, add 1 tablespoon of butter and garlic cloves. Sauté for 3 minutes until browned and fragrant.
  • Pour in chicken broth and heavy cream, and add garlic powder. Simmer for 8-10 minutes until reduced and thickened.
  • Return chicken to the skillet and spoon the creamy sauce over top. Heat through and serve.

Notes

You can use boneless, skinless chicken thighs instead of breasts. For convenience, pre-minced garlic can be used.
