Ingredients
  

  • 2 large chicken breasts boneless/skinless
  • salt to taste
  • pepper to taste
  • ¼ teaspoon garlic powder
  • Flour for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • cup chicken broth preferably low-sodium
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 cup heavy cream or whipping cream

Instructions
 

  • Cut the chicken in half lengthwise to create 4 smaller cutlets and season with garlic powder, salt, and pepper. Coat in flour.
  • Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
  • Add chicken pieces to the pan and cook for 4-5 minutes per side until golden. Remove from pan when browned.
  • Remove the pan from heat and add remaining butter, chicken broth, Dijon mustard, and honey.
  • Return the pan to the stove over medium heat and stir until the mustard dissolves.
  • Add the cream and bring the sauce to a bubbling state. Return chicken to the pan and let cook for 5 minutes until cooked through and sauce reduces.

Notes

Chicken is safe to eat when it reaches an internal temperature of 165F. Use an instant read thermometer to test for doneness. Use fairly large boneless/skinless chicken breasts for this recipe, or if smaller, use four whole breasts. Optional equipment: cast iron skillet.
