Ingredients
  

  • 1 pound Boneless Skinless Chicken Breast cut into bite-sized cubes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • 3 tablespoons Butter salted
  • 1 large White Onion finely diced
  • 12-16 ounces Mushrooms sliced, any variety
  • 4 cloves Garlic mashed
  • 1 cup Orzo
  • 1 cup Marsala Wine
  • cup Chicken Broth
  • cup Full-Fat Coconut Milk or Heavy Cream
  • 1 cup Italian Parsley chopped, plus more for garnishing

Instructions
 

  • Pat the chicken dry with a paper towel and cut it into cubes. Set it aside.
  • Heat a deep skillet over medium-high heat and add in the olive oil.
  • Add in the chicken, sea salt, and black pepper. Cook until almost cooked through - about 6-7 minutes.
  • Remove the chicken from the skillet and set it aside.
  • In the same pan, add the butter, onion, mushrooms, and garlic. Cook for about 4-5 minutes until onions look translucent.
  • Add in the orzo and stir for about 3 minutes to toast it lightly.
  • Add in the marsala wine and broth, bring to a boil, and cook for 2 minutes.
  • Reduce heat, add chicken back, cover, and cook for 12 minutes or until orzo is cooked through.
  • Remove the cover and add in the coconut milk/heavy cream and chopped parsley. Stir to coat.
  • Taste and adjust seasonings as needed. Remove from heat.
  • Sprinkle remaining parsley on top, plate, serve, and enjoy!
