Ingredients
  

Pasta and Sauce

  • 0.5 kg pasta such as tagliatelle, fettuccine or linguine
  • 1 unit shallot
  • 1 clove garlic
  • 1 tablespoon butter
  • 200 g salmon fillet, skin removed
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 80 g mixed greens such as spinach, arugula, watercress
  • 0.5 unit lemon, zest and juice
  • 0.25 teaspoon salt or to taste
  • 1 tablespoon fresh parsley, chopped

Cooking Instructions

  • Cook the pasta in a large pot of salted boiling water according to package instructions.
  • Remove the skin from salmon fillet, check for residual bones, remove if any found and cut into bite-sized pieces. Season with salt and pepper and sear on all sides in 1 tablespoon of butter until cooked through, about 2-3 minutes. Remove to a plate.
  • In the same pan, add 1 tablespoon olive oil, chopped shallots, and minced garlic. Sauté over low heat for 1-2 minutes, then turn to medium heat, add white wine, and reduce for 5-7 minutes.
  • Add heavy cream, mixed greens, salt, lemon zest, and lemon juice. Mix to combine.
  • Add drained pasta to the sauce and toss to combine, top with seared salmon and chopped parsley, then serve.

Notes

Reserve some pasta water before draining to add to the sauce for flavor and creaminess. Use a large skillet for searing the salmon for optimal results.
