Ingredients
  

  • 12.5 ounces strawberries sliced
  • 0.5 cup granulated sugar
  • 1 cup heavy cream cold, with at least 30% fat content
  • extra strawberries for topping

Instructions
 

  • Clean and slice the strawberries, then blend with the sugar until pureed. Remove ½ cup of puree and set aside.
  • In a cold bowl, beat the cream until stiff peaks form. Fold in the remaining puree gently.
  • Divide the ½ cup of puree between 4 glasses and top with the mousse. Refrigerate for approx 1 hour or overnight. Top with fresh sliced strawberries and serve.

Notes

For a filling, whip the cream until thickened, stir in the puree, then dissolve 1 tablespoon of gelatin in warm milk and combine with whipped cream mixture.
