Ingredients
  

Noodles and Sauce

  • 8 ounces dried noodles udon, ramen, soba, lo mein, or spaghetti
  • ¼ cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 3 tablespoons toasted sesame oil divided
  • 1 tablespoon honey
  • 2 teaspoons cornstarch
  • 1 teaspoon Asian chili-garlic sauce such as sambal oelek (optional)
  • 4 cloves garlic minced

Main Ingredients

  • 1 pound lean ground beef
  • ½ small head green cabbage about 10 ounces, thinly sliced (about 4 cups)
  • 1 small yellow onion thinly sliced (about 1 cup)
  • thinly sliced scallions for garnish (optional)

Instructions
 

Cooking Steps

  • Bring a large pot of salted water to a boil. Add noodles and cook for 1 minute less than package instructions. Meanwhile, whisk soy sauce, rice vinegar, 1 tablespoon toasted sesame oil, honey, cornstarch, Asian chili-garlic sauce if using, and minced garlic together in a bowl.
  • Drain the noodles and rinse well under cool water. Let sit in the strainer.
  • Heat 1 tablespoon of toasted sesame oil in a skillet over medium-high heat until shimmering. Add ground beef, season with salt and pepper, and cook until browned, about 5 to 7 minutes. Transfer to a plate.
  • Heat remaining tablespoon of toasted sesame oil in the skillet. Add sliced cabbage and onion. Cook until the bottom is lightly browned, about 3 minutes. Toss and cook until crisp-tender, 1 to 2 minutes more.
  • Reduce heat to medium. Return beef and juices to skillet. Add noodles and the sauce. Cook, tossing regularly, until heated through, about 1 minute. Garnish with scallions if desired.

This recipe can be customized with additional vegetables or spices of your choice.
