Ingredients
  

Main Ingredients

  • 1.2 kg potatoes Desiree, Yukon Gold, or Maris Piper
  • 1.5 cups chicken stock low sodium
  • 0.5 cup olive oil
  • 0.33 cup lemon juice
  • 5 cloves garlic finely grated
  • 1 tablespoon dried oregano
  • 2 teaspoon salt

Garnish (optional)

  • lemon wedges
  • fresh oregano leaves

Instructions
 

Cooking Instructions

  • Preheat oven to 200°C/390°F (180°C fan).
  • Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3.
  • Place potatoes in a roasting pan with all the other ingredients. Toss well.
  • Roast for 20 minutes, then turn potatoes and roast for a further 25 to 30 minutes.
  • Transfer potatoes to a separate tray, scoop off excess oil, drizzle it over the potatoes.
  • Roast for 35 to 40 minutes, turning once or twice, until golden and a bit crispy.
  • Return pan with garlic juices to the oven for 5 - 10 minutes to reduce.
  • Transfer potatoes to serving platter and drizzle reduced garlic pan juices over.

Notes

Use starchy potatoes for better flavor absorption. Optional steps for crispiness are included.
