Mongolian Ground Beef Noodles
Sweet and saucy, these Mongolian ground beef noodles are a quick weeknight meal with exceptional flavor from the beef and savory sauce.

Noodles and Beef
- 10 ounces rice noodles
- 1 pound ground beef 80/20
- 1 teaspoon fresh ginger, finely minced
- 4 cloves garlic, finely minced
- green onions, sliced for garnish
- white sesame seeds for garnish
Sauce
- ½ cup low-sodium soy sauce
- 2 tablespoons dark soy sauce
- ½ cup water
- ¼ cup brown sugar
- 3 tablespoons cornstarch
Instructions
Preparation
- Whisk together all the ingredients for the sauce and set aside.
- Cook rice noodles according to the instructions on the package and set aside.
- In a large wok over medium-high heat, add a little cooking oil. Once hot, add ground beef and break into smaller pieces. Cook until nearly no pink remains.
- Add the ginger and garlic. Cook until fragrant, about 2-3 minutes.
- Pour the sauce over the ground beef and allow to gently simmer and thicken for 3-4 minutes.
- Add the rice noodles on top and toss everything together to coat the noodles in the sauce.
- Garnish with sliced green onions and white sesame seeds on top.
Notes
This dish is perfect for a quick weeknight dinner, and leftovers can be kept in the fridge for a couple of days.
