Ingredients
  

Cream Cheese Mixture

  • 16 ounces cream cheese softened at room temperature
  • 14 ounces sweetened condensed milk 1 can
  • cup lemon juice from about 2 large lemons
  • 1 lemon zest divided, reserve ⅓ for garnish

Crust

  • 1 10-inch graham cracker crust store bought

Instructions
 

Making the Cheesecake

  • Add softened cream cheese, sweetened condensed milk, lemon juice, and ⅔ of the lemon zest to a large mixing bowl, and beat on high until smooth and creamy (about 4 minutes).
  • Transfer to a graham cracker crust.
  • Sprinkle reserved lemon zest on top, and refrigerate until filling is set, about 3 to 4 hours.
  • Serve chilled, and garnish with extra lemon slices, if desired.

Notes

Store-bought crust is used, but homemade works too. Full-fat cream cheese is recommended, but light cream cheese can be used. Fat-free cream cheese is not recommended.
