Ingredients
  

Pastry Ingredients

  • 400 g plain flour plus extra for rolling
  • 2 tablespoon caster sugar
  • 1 whole lemon zest only
  • 250 g cold butter cut into cubes
  • 1 whole free-range egg beaten with 2 tablespoon cold water
  • 1 whole free-range egg beaten, to glaze

Filling Ingredients

  • 150 g golden caster sugar plus 1 tablespoon for sprinkling
  • 1 teaspoon ground cinnamon
  • 2 tablespoon cornflour
  • 600 g Bramley cooking apples peeled, cored, sliced

Instructions
 

Pastry Preparation

  • In a bowl, combine the flour, sugar, and lemon zest. Rub in the butter until resembling breadcrumbs. Add the beaten egg and mix into a dough.
  • Reserve one-third of the pastry for the lid. Roll out the rest to fit the pie dish.
  • Place the pastry in the dish, pressing it into the sides and chill.

Filling Preparation

  • Preheat the oven to 200C/180C Fan/Gas 6 and preheat a baking tray.
  • In a large bowl, mix sugar, cinnamon, and cornflour. Stir in apples until well coated.
  • Fill the pie dish with the apple mixture, brushing the rim with beaten egg.

Final Assembly and Baking

  • Roll the reserved pastry for the lid, cover the pie, and seal the edges.
  • Trim excess pastry, crimp edges, poke holes in the center, and glaze with egg.
  • Sprinkle with sugar and bake for 45-55 minutes until golden brown and apples are tender.

Notes

Serve warm or cold with cream, custard, or ice cream.
