Ingredients
  

Topping

  • ¼ cup unsalted butter melted
  • ½ cup brown sugar packed
  • 8-10 slices pineapple (see note)
  • 15-20 pieces maraschino cherries (see note)

Cake

  • 1.5 cups cake flour (spooned & leveled)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter softened to room temperature
  • ¾ cup granulated sugar
  • 2 large egg whites at room temperature
  • cup sour cream at room temperature
  • 1 teaspoon pure vanilla extract
  • ¼ cup pineapple juice at room temperature (use leftover from can)
  • 2 tablespoons milk at room temperature

Instructions

  • Preheat oven to 350°F (177°C).
  • Prepare topping first by pouring melted butter into a pie dish, sprinkling brown sugar over it, and arranging pineapple and cherries on top. Place in the refrigerator.
  • Whisk together the cake flour, baking powder, baking soda, and salt; set aside.
  • Beat butter and sugar until creamy, add egg whites, sour cream, and vanilla. Mix in dry ingredients, then slowly add pineapple juice and milk. Do not over-mix.
  • Pour and spread cake batter evenly over the topping.
  • Bake for 43-48 minutes, tenting with foil halfway through. Check with a toothpick for doneness.
  • Cool the cake in the pan for 20 minutes then invert onto a serving plate.
  • Allow to cool completely at room temperature before slicing and serving.
  • Store leftover slices in the refrigerator for up to 3 days or freeze for up to 3 months.

Notes

Make ahead instructions: Refrigerate topping for up to 1 day. Prepare wet and dry ingredients separately up to 1 day ahead.
