Ranch Garlic Parmesan Chicken Skewers

Ingredients
  

Chicken

  • 2 lbs chicken tenders (thighs or breast)
  • 2 tablespoon olive oil

Garlic Parmesan Butter Sauce

  • 1 stick butter
  • 8-10 cloves garlic (minced)
  • ½ cup parmesan (grated)
  • 1 tablespoon hot sauce more if desired
  • 2 teaspoon red pepper flakes
  • cup fresh parsley (minced)
  • 1 tablespoon dry ranch seasoning
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder

Chicken Seasonings

  • 1.5 tablespoon dry ranch seasoning
  • 1 teaspoon dried dill
  • 2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

Prep and Skewer Chicken

  • Soak your wooden skewers in water for at least 30 minutes.
  • Combine chicken seasoning mixture in a small bowl and set aside. Cut chicken into 3" pieces. Toss in olive oil and the spices until coated.
  • Pack chicken onto skewers tightly with no space in between to ensure juiciness. Trim skewers if necessary.

Make the Garlic Parmesan Butter Sauce

  • In a microwave-safe bowl, heat butter and garlic until partially melted. Add red pepper flakes, hot sauce, seasonings, and parmesan. Whisk until combined.
  • Scoop out ⅓ of the sauce for basting the par-cooked chicken. Reserve remaining sauce for cooked chicken to avoid cross-contamination.

Cook The Chicken

  • Cook 2-3 skewers at a time in an air fryer at 400°F for 5 minutes. Flip, baste with sauce, and cook for an additional 2 minutes.
  • Flip back, baste with more sauce, and cook for another 5-6 minutes or until internal temp reaches 165°F. Total cook time is 12-14 minutes.
  • After cooking, apply a final pass of the reserved garlic sauce and sprinkle with extra parmesan before serving.

Notes

See notes for oven or grill instructions. For oven, preheat to 450°F and cook for 14 minutes, flipping halfway. For grill, preheat to medium-high and cook each side for 5-6 minutes.
